A granita really is the ultimate summer dessert! It’s light, refreshing, and packed with seasonal fruit flavours. Think of it as a grown-up sno-cone, with a hint of lime and a splash of vodka (optional, of course!). Best of all, you don’t need any fancy equipment—just a small food procssor, a shallow dish, a fork, and a freezer.
Start with a seedless watermelon. Simply scoop out the flesh and blend until smooth. If your watermelon has seeds, set aside some time to remove them carefully—it’s worth the effort! Mix watermelon puree with sugar, lime juice, and your choice of alcohol (or skip it for a kid-friendly version). Stir everything together, freeze, and scrape with a fork every 30 minutes.
WATERMELON, LIME & MINT GRANITA
Equipment
- 1 Food Processor I use my MagiMix
- 1 Freezer Safe Baking Pan
- 1 Fork for scraping the freezing granita
Ingredients
- 1/2 cup Sugar
- 1/2 Watermelon Seedless or seeds removed
- 1 Lime Juice of
- 1/2 cup Vodka
- Handful Mint Fresh, schredded
Instructions
- Scoop out the flesh of the watermelon into a blender. Add the sugar. Pulse until smooth. You may have to do the watermelon in batches.
- Transfer the liquid to a bowl. Now stir in the vodka and lime juice. Stir until it is all combined.
- Add this mixture to a baking dish of about 22.9 × 33cm. Cover the dish with cling wrap very well. Please in the freezer.
- Check on your granita after one hour. Once your ice is starting to form, you can scrape the ice with a fork. Put the granita back into the freezer.
- Prepare yourself for the most refreshing, ice cold treat of the summer! Serve as a dairy-free dessert, a palate cleaner or even a welcome drink.
