Summer is for sipping delicious icy-cold drinks, right? I’m mostly seen with a G&T or a glass of Chardonnay in hand, but this Watermelon Margarita is oh so good that I’m considering it as my official summer drink. Even those who don’t like traditional Margaritas are sure to enjoy these non-frozen watermelony ones.
Watermelon Margaritas, serves 8
8 Cups of Fresh Watermelon, deseeded & cubed
4 Tablespoons of sugar
7 Limes (5 juiced, 1 for the salt rim, 1 for garnish)
500 ml good quality Tequila
250 ml Triple Sec
6 tablespoons of salt
Ice (cubes or crushed) for serving
Do ahead:
In a blender, puree the watermelon & sugar until smooth. Strain the puree. Add the lime juice to the watermelon juice, cover & chill until your guests arrive.
Pour the salt into a saucer. Cut the lime that you kept aside for the rim into wedges & rub the lime onto the rim. Do this gently to avoid getting pulp onto the glass. Now dip the outside of each glass into the salt to coat the rim. You might want to only rim half of each glass if you don’t enjoy the salt too much. The salted rim looks great but personally, I don’t enjoy a salted or sugared rim, so I’ll just skip this altogether.
As your guests arrive:
Transfer the chilled watermelon mixture to a large glass jug, add the Tequila & Triple Sec. Stir to combine.
Divide the ice between the 8 Margarita or Martini glasses, pour in the mixture, garnish each with half a slice of lime & enjoy!
