Now that the festive season is officially underway, you need some tricks to take any occasion to the next level, right?
Well, these little bites are so good that they will fly off the platters, so I recommend that you make more rather than less. The best part is that they take only 15 minutes to make! Serve them before dinner or as canapes with a glass of bubbly.
Smoked Salmon Bites, makes 24
1 Packet (120g) of Charcoal Squares from Woolworths*
100g Smoked Salmon or Trout Ribbons
1 Tub (250g) Crème Fraîche
1 Lemon, juice of half & half sliced into mini triangles for garnish
Mini Jar of Caper Berries
Small Bunch of Fresh Dill, Rinsed
1) Spoon the Crème Fraiche into a bowl. Add some fresh cut up dill. Season the Crème Fraîche as you go, so add one teaspoon of lemon juice (at a time), then freshly ground black pepper & salt to taste. Mix well.
2) Place your charcoal squares on a platter & add a small dollop (about ½ teaspoon) of Crème Fraîche on each cracker square.
3) Roll a piece of Smoked Salmon ribbon into a mini rose & add on top of the Crème Fraîche.
4) Finally add a mini triangle of lemon, 1-3 caper berries & some fresh dill.
5) Open a bottle of bubbly & serve!
