On a super hot summers day, I love to have fruit ice lollies in the freezer for Oliver. We enjoy making these together by freezing half water half juice in a lolly mold. They are such a treat on a scorching day & yet they are still healthy.

So that means the kiddie ice lolly box is ticked, but what about the grown-ups?

Since we are slightly G&T obsessed around here these days  – like the rest of the country – I was keen to make some grown-up ice lollies. When I found this recipe for (*drum roll*) G&T Popsicles I did a little happy dance!

They are really easy & if you like G&T in a glass, then you are sure to adore these little yummies.

Gin + Tonic Popsicles

Makes 10 ice pops (depending on the size of your pop mold)

180 ml MALFY Gin

1/2 Cup of Freshly Squeezed Lime Juice

750 ml / 3 Cups of Tonic Water

Cucumber Slices

Popsicle Mold

Popsicle Sticks (optional)

Juice your limes & then add it to a large bowl with the gin & tonic water. Pick a good gin, a London dry style would be best, or something citrusy & floral. (The MALFY worked very well). Your tonic is key here because it is the biggest ingredient and is going to yield the most flavor to the popsicles. Fever-Tree tonic water—it is clean, fresh, and has a very aromatic flavor that goes perfectly with the citrus notes of gin.

Give your ingredients a good stir & then pour them into the popsicle mold. Leave enough room at the top to add some cucumbers. Cover & insert the popsicle sticks. Send them to the freezer & let freeze for at least 6 hours, although overnight is always best.

And then you have a delicious little G&T popsicle or two or three.
