Don’t you just love cakes or treats with a little surprise centre? My best is a Pinata Cake! Or those cupcakes that ooze caramel when you give them a bite. And I also vaguely remember a Christmas Pudding from my youth that had coins (yes, actual money) inside. What was that all about….? Anyway. Moving along.

Lindor Balls are right at the top of my list of favourite indulgences & when the brand new Lindt Mint Balls landed on my desk recently, I got so excited that I started dreaming up a recipe to incorporate these little babies in & so I found myself making these…..

Lindor Ball Surprise-Centre Cupcakes

Makes 12

Batter:

1 Cup Cake Flour, sifted

1 Cup Sugar, sifted

½ Cup Unsweetened Cacao powder

½ Teaspoon of bicarbonate of soda

¼ Teaspoon of baking powder

¼ Teaspoon of salt

¾ Cup of Milk

¼ Cup of Vegetable Oil (I used Sunflower Oil)

1 Teaspoon of vanilla

1 Egg

 

Chocolate Buttercream:

12x Mint Lindor Balls (You can use any Lindor balls but I love this minty version.)

125g Butter, at room temperature

1½ Cup (185g) Icing Sugar, sifted

30 g Cocoa Powder

1 Tablespoon Milk

1 Teaspoon of Peppermint or Vanilla Extract

 

  1. Preheat your oven to 180 °C & pop 12x cupcake cases into a muffin tin.
  2. For the cupcakes: In a large mixing bowl combine flour, sugar, cocoa powder, baking soda, baking powder & salt. Add milk, oil & vanilla. Beat with an electric mixer on low speed until just combined. Beat on medium speed for 2 minutes. Add your egg & beat for another 2 minutes. Spoon equal amounts of batter into the 12 cupcake cases. *
  3. Bake for about 15 minutes or until a wooden toothpick comes out clean. Cool the cupcakes on a wire rack for 10 minutes.
  4. Make your buttercream: Beat the butter with an electric mixer for about 5 minutes (or until very pale). Gradually add in the icing sugar & the cocoa.
  5. Add the milk & vanilla. Beat until well combined & use.
  6. Add the Lindor surprise: Cut a cross at the top of your cupcake. Now gently squeeze in the Lindor ball. *I have also tried to add the Lindor ball before baking the cupcakes, but they melt completely & therefore don’t create the best look when you bite into it.
  7. Spread each cupcake with chocolate buttercream, top each with a mint leaf & enjoy!

There you have it: cupcakes with secret Lindt centres! So yum.
