Winnie the Pooh was right when he said: “What could be more important than a little something to eat?”
As far as small bites are concerned, I recommend you add this recipe on rotation – for a small, fantastical edible gift, a lunchbox treat or a little something for those late afternoon cravings. This is also the kind of recipe where you can switch ingredients out with whatever you have in your pantry. Use whatever kind of nut you like – you can swap almonds for pecans, walnuts, or cashews if you are in the mood. To finish off the balls, you can leave them completely uncoated, roll them in desiccated coconut or in cacao.
Date & Cacao Balls – makes 12 balls
- 4 Tbsp desiccated coconut plus a bit extra
- 1/4 Cup of almonds
- 1/2 Cup of dried cranberries
- 1 Cup pitted Medjool dates
- 1 Tablespoon Raw Cacao – I used the Local Village Foods raw cacao
- 1 Tbsp maple syrup/honey
Combine the coconut, almonds, cranberries, dates, cacao & honey or maple syrup to a food processor & blend well.
Roll the sticky mixture into small date balls & toss in desiccated coconut.
Grab one or two little date magic balls whenever you feel like a little something to nibble on.
