Method
- Place the coconut and pure maple syrup in a food processor and process for 30 seconds to 1 minute or until the mixture is roughly combined.
- Add the dried cranberries to the coconut mixture in the food processor and process until finely chopped.
- Shape tablespoonfuls of mixture into domes or small patties and place on a tray lined with non-stick baking paper. Freeze for 15 minutes or until firm.
- Drizzle with melted dark chocolate and refrigerate for an additional 15 minutes.
Notes
Store choc-coconut drops in an airtight container in the freezer for up to 4 weeks.
