Mix your cheese with thegarlic, salt & pepper. Trim the stalk from the top of the fig & maketwo cuts across the fig.
Push the bottom of the figs very gently so that itopens at the top. Now gently push the cheese & garlic mixture into the figs.
Tightly wrap a piece of Parma ham around each fig & then drizzle withsome olive oil. If you feel like the figs are falling apart, secure the hamwith a toothpick.
Pop into the oven for about 10-12 minutes or until the ham & figs are a bit golden & warm throughout.
Serve on a bed of rocket leaves drizzled with olive oil.Season to taste & serve. So good!

This recipe serves 4-6, so please add as many figs as you like.
