More and more people are opting for cleaner diets and gluten-free options. It is believed that one third of all Americans are avoiding gluten and the numbers are increasing every day. Even though so many people are gluten-free, the store bought treat selection is often still limited.

Enter these cute 4-ingredient buttons! These are perfect for anyone with food allergies, food intolerances and special diets. It’s not every day that you will find a gluten-free, dairy-free & egg-free treat this good, right?

Each of the four ingredients brings something special to the party. The desiccated coconut forms the base of this recipe, giving the treats their soft, chewy texture. Coconut is naturally high in fibre and healthy fats, so one treat is quite satisfying. The addition of the dried cranberries adds a gentle sweetness and a pleasant tartness.

The final touch? A drizzle of good-quality 70% dark chocolate.

This recipe also leans itself to batching, so make a large batch ahead and store in an airtight container or pop into the freezer for unexpected guests or midweek cravings.

Gluten-Free Coconut and Cranberry Treats

Aren't these just as cute as buttons? This no-bake recipe can even be something to get those kiddos involved with.
Servings: 30 buttons
Course: Snack

Ingredients
  

  • Coconut & Cranberry Treats makes about 15
  • 2 Cups Desiccated coconut
  • 1/3 cup 80ml Pure maple syrup
  • 100 g 70% Dark chocolate melted
  • 65 g Dried cranberries (half a cup)

Equipment

  • Food Processor

Method
 

  1. Place the coconut and pure maple syrup in a food processor and process for 30 seconds to 1 minute or until the mixture is roughly combined.
  2. Add the dried cranberries to the coconut mixture in the food processor and process until finely chopped.
  3. Shape tablespoonfuls of mixture into domes or small patties and place on a tray lined with non-stick baking paper. Freeze for 15 minutes or until firm.
  4. Drizzle with melted dark chocolate and refrigerate for an additional 15 minutes.

Notes

Store choc-coconut drops in an airtight container in the freezer for up to 4 weeks.
