Last year around this time, I was really eager to start making my own ice creams. By November I just couldn’t handle all the gorgeous ice creams that I was seeing online, so I just had to get an ice cream maker of my own. I usually consider the purchase of any (small or large) kitchen appliance very carefully, because I don’t like having appliances stand around, but my little Krupps Ice Cream Maker has only ever given me pure joy!

I’ve tried my hand at many different ice creams over the last year. For my birthday in February this year, I even had a little ice cream eating party for our friends in George. I made about five different ice creams & they were all such fun.

I absolutely love making my own ice creams, so as the days get warmer I’ll be sharing some more of these recipes with you. For now, here is a rather grown-up type ice cream.

Strawberry & Balsamic Ice Cream, serves 4-6

400g Strawberries, hulled, quartered, plus extra to serve

1/4 cup (60ml) Balsamic vinegar, plus extra to drizzle

2/3 cup (100g) Pure icing sugar

2 cups (500ml) Cream

Place strawberries & vinegar in a bowl & leave to macerate for 20 minutes. Transfer to a food processor with sugar & blend until smooth. Place in a bowl, cover & refrigerate for 2 hours.

Whip the cream, then fold into the strawberry mixture. Pour into a shallow container & freeze until frozen at edges. Beat with an electric beater. Pour back into container and re-freeze. Repeat 2 or 3 times. (I used my ice cream maker for this step instead.)

Serve the ice-cream with strawberries, a drizzle of balsamic & some basil leaves if you fancy.

 

I really enjoy this classic combination of strawberry & balsamic. The vinegar enhances the flavour of the strawberries; takes off the richness of the ice cream & replaces it with a delicious tangy taste!

A tip is to serve this ice cream directly after churning it in the ice cream maker, as home-made ice creams tend to melt very quickly. Also remember to place it in the freezer as soon as you’ve dished up so that the remainder of the ice cream doesn’t go to waste.
