End-of-year madness & the festive season is right around the corner, which means it’s time to pull out your favourite summer recipes! I love anything with vanilla & this punch is no exception.
Recipe by Herman Lensing, food editor of Sarie magazine. This guy might be young, but he is über-talented. Love his work! I’ve included a few of my own recommendations here & there.
Vanilla & Blueberry Punch, Serves 8
1x vanilla pod, seeds scraped out
240g frozen blue berries, defrosted
300 g (375 ml) sugar
500 ml water
1 kg ice, broken or crushed
2 lemons, cut into slices
2 litre lemonade (The original recipe calls for lemonade, which makes this a very sweet drink. I prefer sparkling water or dry sparkling white bubbly for a less sweet or slightly more fun version!)
Place the vanilla seeds & pod, berries, sugar & water in a medium saucepan. Bring to a boil & let it simmer for 8 minutes or until the liquid is about 1/3 less. Let it cool down until ice cold. Now use a stick blender to blend to a puree. Place ice, lemon slices & cold syrup in a punch bowl or jug. Add your lemonade; sparkling water or dry sparkling white bubbly.
