
I grew up munching coleslaw week-after-week-after-week. It was my mother’s go-to salad. And I loved it. Her version was mostly white cabbage sprinkled with garlic salt smothered is a very creamy mayo.
I thought eating coleslaw was normal & everyone liked it.
That is: until I realized that you are either a coleslaw fan or not. But, I believe that cabbage is a taste that you can acquire. Do you agree? A bit like fresh coriander or olives or whiskey. Case in point: when I met Ernie, he wasn’t interested in even trying cole slaw. These days he will – without protest – have a good helping of coleslaw & enjoy it!
5-Ingredient Chopped Slaw

Small red cabbage
Small green cabbage
Half a head of cauliflower
Dried cranberries to taste
Mayo (I used Nola mayonnaise)
Optional: Roasted mixed seeds
Method:
If you are using seeds, place them in a pan on stovetop & roast them. Set aside to cool.
Just rinse, dry & chop the cabbage & cauliflower. Toss with mayo. Add your cranberries.
Add seeds just before serving.

It is that easy. Yum!
