Whenever I see berries at my local green grocer, the punnets just fly into my basket & the ideas of recipes to make, make my head spin. The very best recipes are still the ones where the berry remains the star, right? And this easy dish is a perfect example. Eat it as a snack, breakfast or a dessert.

What’s fun about this specific recipe is that you can decide how decadent or healthy you want to make it. The idea is basically to combine a variety of fresh, seasonal berries & nuts. Then add pomegranate rubies & other special bits to make it extra special.

Blue & Red Berry Treat, serves 6 – 8

4 – 6 punnets of berries in total (eg, blueberries, strawberries, raspberries & blackberries, or substitute one of the berries with two big handfuls of seedless grapes)

Pomegranate rubies from half a pomegranate

1x cup of raw, unsalted mixed nuts

Juice of half a lemon

Optional – to serve:

Lindt chocolate (shavings or shards) or chocolate buttons

Crème fraîche, plain double cream or fat free yogurt, mascarpone cheese.

Halve the pomegranate, whack out the rubies with a wooden spoon & remove all the skins. Now rinse all the berries & pat dry. Mix all the ingredients together, sprinkle with lemon juice & serve with a few dollops of crème fraîche.

This is more of a throw together than an actual recipe. Totally my style; quick, fresh & delicious!
