As usual, I’m super excited for the Oscars. The dresses, red carpet interviews & suspense… Off course I’m also very happy that Ellen will be hosting the awards this year! Yay!

If you live in sunny South-Africa (like me!) then you can either wake up at 3am to watch live or wait until the next night to catch the show. The latter is a tough one, since you’ll have to steer clear of all the spoilers for the whole of Monday.

Either way, there’s no reason not to put on something fancy (even if it’s your black gown & some lip gloss at 3am) and off course, the evening won’t be complete without a yummy treat. This is what we’ll be having…

fancy bubbly jellies with fruit, serves six

  • 55g of caster sugar
  • 300ml hot water
  • 500ml sparkling wine (feel free to use real champagne!)
  • 4 gelatine leaves
  • Star fruit (if you can find these), pomegranate rubies or fresh raspberries

Optional:

  • A few drops of good quality food colouring
  • If you’d like a more pinkish looking drink, go for pink or red bubbly & pink berries

Begin by chilling the sparkling wine & the glasses – anything from bubbly glasses, Martini or even coloured wine glasses will do.

Add the water & sugar to a small pot over medium heat, stirring to dissolve the sugar. Now turn up the heat & bring to the boil. Reduce the heat & let it simmer for five minutes. Remove from the hob.

In the meantime, soak your gelatine leaves in some cold water until it’s soft & squidgy. Measure half of your sparkling wine into a plastic jug, then pour it into the glasses at an angle, taking care not to lose the bubbles. You can now pop a few pieces of fruit in with the bubbly if you wish. Watch the fruit pieces ‘grab’ the bubbles when you do this. So cute!

Next, remove the gelatine leaves from the water, squeeze out as much water as you can & add it to the sugar syrup. Whisk furiously until the gelatine dissolves. Pour your syrup back into the jug with the rest of the sparkling wine & whisk to combine. (If you are going to colour your jelly, then this is the point at which you add a few drops colouring.) Carefully pour the mixture into the glasses, still trying not to let a lot of the bubbles get lost.

Cover each glass with cling film overnight (or for at least six hours). Serve topped with more fruit, some whipped cream or just as is & enjoy.
