This was such a fun ‘no-bake’ cake to make & it is even yummier than I anticipated. To me it is also a perfect kids cake, so get them involved! Here goes:

Rice Crispies Rainbow Cake, Serves about 12

For the ‘cake’ layers:

6 tablespoons of unsalted butter

9 cups of mashmallows (mini’s mashies are best or use large mashmallows that are chopped into smaller chunks with food scissors)

15 ml of vanilla extract

12 cups of Rice Krispies cereal (I used Kellogg’s)

3 food colouring options that you like

For the icing:

1 cup of unsalted butter, softened

2 1/2 cups icing (confectioners) sugar

A few drops of vanilla extract

A few drops of milk or hot water

Sprinkles, sweets or other toppers, to decorate

 

Spray three round cake tins with non-stick spray & set aside.

Divide the Rice Krispies & mashmellows into three different bowls. Now melt two tablespoons unsalted butter over medium heat in a saucepan on the hob or in the microwave. Add 5ml of vanilla extract & then three cups of mashmallows.

Mix together with a silicone spoon or spatula until all the Rice Kripies are coated. Once it is all melted, remove from heat & transfer to a clean bowl.

Add your first food colouring & gently but quickly mix through. Next transfer the mixture to one of the cake tin (you might need some butter on your fingertips to be able to press it down in the tin).

Repeat for the next two layers. Cover with wax paper & stack in the fridge for two hours.

About an hour before serving, quickly make your icing. Beat the butter by hand or with an electric beater until light & fluffy. Sift in the icing sugar & add a drop of vanilla extract. Continue to beat the mixture until you have a smooth, light consistensy. If you find that it is too thick, add a few drops of milk or water.

Divide the icing into three. Pop the cake layers out of the tins & place the first onto a plate or board (I used a wooden board covered with foil). Layer the Rice Krispie cake layers & the icing to form the three tiered ‘cake’.

Finally, add your sprinkles & other topics. Use a large, sharp knife to cut in slices.

There you have it: a super fun & easy no-bake cake. Yummmy.

    • Haha Candice. You should! (When is it)? I actually made this specific one for my mom-in-law’s birthday. My philosophy is that the older you get, the more fun you should have with birthdays. x
